Sourdough Rye. The pain de seigle, our version of the rustic sourdoughmiche, is naturally leavened and hand carved with our initial B.  This is the 3-kilo round loaf prominently displayed in the dining room at Balthazar since 1997.  Ingredients: Wheat, rye, water, beer, salt.
